Process

Harvest

Olives are picked at the optimal ripening moment, between October and December, with mechanical methods that preserve the integrity of the fruit. Every area has its own precise calendar.

Delivery

Within 24 hours of harvest, the olives reach one of our 30 partner mills. Speed is essential: the fresher the fruit, the better the oil. Short supply chain, guaranteed quality.

Crushing

Milling is cold-pressed, strictly below 27°C. Controlled crushing and malaxation preserve polyphenols, aromas and the organoleptic profile of every cultivar.

Extraction

The oil is separated from the olive paste using two-phase centrifuges. No solvents, no additives: a purely mechanical process. The result is a pure, genuine extra virgin oil.

Analysis

Every batch is analysed in the laboratories of the PGI Olio di Puglia Consortium. Acidity, peroxides, panel tests: only oils that pass every parameter earn certification.

Storage

Certified oil is held in stainless-steel silos under nitrogen, sheltered from light and heat. Controlled temperatures keep its qualities intact until bottling.

Bottling

The final stage takes place on automated lines under protected atmosphere. Every bottle carries the PGI Olio di Puglia seal and full traceability, from tree to table.
